Instructions

Prepare the filling

  1. Step 1: Melt the butter in a large pot over high heat.

  2. Step 2: Add the garlic and onion. Cook for 2 minutes, until the onion is almost translucent.

  3. Step 3: Add the capsicum and cook for 2 minutes, until softened.

  4. Step 4: Add the beef and cook, breaking it up as you go, until it changes from red to brown.

  5. Step 5: Add the remaining filling ingredients and mix well. Turn the heat down to medium-low, or low if your stove runs strong.

  6. Step 6: Cover and cook for 30 minutes, stirring once or twice to keep the mixture from catching on the base of the pot. If you are in a rush, cook uncovered for 15 minutes.

  7. Step 7: Remove the lid and stir well for 1 minute. The mixture should be thick, not runny or saucy. Adjust the salt to taste.

Assemble

  1. Step 8: Toast the rolls. Butter them if desired.

  2. Step 9: Pile the filling onto the rolls and immediately top with cheese. The heat should partly melt the cheese; if needed, place the sandwiches under the broiler or grill. Add the top of each roll and serve immediately.

Notes

For a slow cooker version, cook the filling on low for 6 hours, then stir well to evaporate excess liquid.

The filling keeps for 4 to 5 days in an airtight container in the refrigerator, or up to 3 months in the freezer. Cool it before freezing, then defrost and reheat. Store the rolls separately.

Ground pork also works. For chicken or turkey, use a chicken bouillon cube and add 1 teaspoon extra Worcestershire sauce. The beef bouillon cube can be replaced with 1.5 teaspoons beef stock powder, chicken bouillon, or salt added to taste at the end.

For a little less sweetness, leave out the brown sugar or add it gradually toward the end, adjusting to taste.
