Instructions

  1. Step 1: Divide the beef into 4 equal portions. Use your hands to gently shape each portion into a patty about the size of a bun. Do not press hard; a light touch helps keep the patties soft and juicy.

  2. Step 2: Season both sides generously with salt and pepper. Make a dent in one side of each patty to help prevent it from doming and shrinking as it cooks.

  3. Step 3: Heat 1 tbsp oil in a heavy-based skillet or on a barbecue over high heat. Add the onions and cook until wilted and caramelized. Season with salt and pepper, then remove them from the pan.

  4. Step 4: Heat 1 tbsp oil until smoking. Add the patties and cook for 2 minutes, until deeply golden with a crust. Do not press them. Carefully flip and cook for 1 minute, then top with cheese if using. Cover with a lid and cook for 1 more minute, until the cheese melts.

  5. Step 5: Meanwhile, lightly toast the cut sides of the buns.

  6. Step 6: Spread the base of each bun with a sauce or condiment of choice. Add lettuce, tomato, and a patty. Top with onions, sliced pickles, and more sauce or condiments, then add the bun top. Serve immediately.
