Equipment

  • Oven
  • Microwave
  • Ovenproof skillet
  • Toothpicks

Instructions

  1. Step 1: Preheat the oven to 180°C/350°F (160°C fan).

  2. Step 2: Cut a pocket into each chicken breast, taking care not to cut all the way through. Cut along the side with the fold in the meat, leaving the smooth side intact.

  3. Step 3: Microwave the cream cheese for 30 seconds to soften. Mix it with the remaining jalapeño popper stuffing ingredients.

  4. Step 4: Fill the chicken pockets, pushing the stuffing all the way inside. Secure each breast with 2 or 3 toothpicks. If some stuffing peeks out, it will crisp in the pan. Sprinkle paprika and salt over both sides of the chicken.

  5. Step 5: Heat the oil in an ovenproof skillet over medium-high heat. Place the chicken smooth-side down and sear for 2 minutes, until golden; it will not brown further in the oven. Flip and sear the other side for another 2 minutes.

  6. Step 6: Transfer the skillet to the oven and bake for 15 minutes, or until the chicken reaches an internal temperature of 67°C/155°F.

  7. Step 7: Transfer the chicken to a plate and rest for 5 minutes, then serve.

Notes

For a non-spicy alternative, use finely diced green capsicum (bell pepper) in place of the jalapeños. Leftovers keep in the fridge for 3 days.

About this recipe

Jalapeño popper filling turns chicken breast into a cheesy, gently spicy dinner. The cream cheese, mozzarella and Parmesan make a creamy center, while paprika seasons the outside.

Fill and secure the chicken, sear it until golden, then finish it in the oven. Let it rest before serving so the juices stay in the meat.
