Step 2: Transfer 2 tablespoons of the sauce to the chicken and mix to coat. Set aside for at least 10 minutes.
Step 3: Heat the oil over high heat in a wok or heavy-based skillet. Add the garlic and onion and cook for 1 minute.
Step 4: Add the chicken and cook for 2 minutes. Add the capsicum and cook for 1 minute.
Step 5: Add the remaining sauce and the water. Bring to a simmer and cook, stirring, for 1 minute or until the sauce thickens.
Step 6: Stir in the cashews and remove the pan from the heat. Serve immediately with rice.
Notes
Ingredient notes and substitutions
Use all-purpose or light soy sauce; avoid dark soy sauce, which can make the sauce very dark and strongly flavored.
Mirin or dry sherry can replace Chinese cooking wine. For an alcohol-free option, use low-sodium chicken broth in place of both the cooking wine and the water.
Chicken breast or tenderloin can replace the thigh. The recipe notes that breast can be tenderized using the Chinese method of velveting chicken.
Storing leftovers
Refrigerate leftovers for 3 to 4 days. Freezing is not recommended because the cornstarch-thickened sauce may become watery.
