Instructions
Step 1: Put the sauce ingredients in a small bowl and mix to combine.
Step 2: Heat the oil in a wok or pan over high heat.
Step 3: Add the garlic and chilli and cook for 10 seconds. Don’t inhale—the chilli may make you cough.
Step 4: Add the white part of the green onion and the chicken. Fry until the chicken is cooked, around 2 minutes.
Step 5: Add the sauce and cook for 1 minute, until the water reduces and the sauce is thick and glossy.
Step 6: Toss through the green part of the green onion and the basil leaves. Stir until just wilted, then serve immediately with steamed jasmine rice.
Notes
Finely chopped garlic is less likely to burn and spit in a hot wok than minced or jarred garlic.
You can substitute ordinary all-purpose soy sauce for the light soy sauce, for both soy sauces, or use light soy sauce alone. The flavour will be less intense and the colour paler. Do not use only dark soy sauce; its flavour will be too intense.
For a simple side, serve cucumber and tomato slices without dressing.

About this recipe
This quick Thai chicken stir-fry combines chicken, garlic, chilli and basil in a savoury, lightly sweet sauce. Serve it over steamed jasmine rice.

Thai basil brings a hint of anise, and Thai holy basil is another option. If neither is available, regular basil works too.
