Instructions

  1. Step 1: Mix all the sauce ingredients in a small bowl.

  2. Step 2: Heat the oil over medium heat in a wok or large skillet. Add the cashews and cook for 5 minutes, until dark golden and crunchy. Remove them from the skillet with a slotted spoon.

  3. Step 3: Turn the heat up to high. Add the garlic and onion and cook for 30 seconds.

  4. Step 4: Add the chicken and cook for 1 minute, until the outside changes from pink to white.

  5. Step 5: Add the white part of the green onions and the chilli. Cook for 1 minute, until the chicken is just cooked through.

  6. Step 6: Add the sauce and cook for 1 minute, until it reduces to a syrup and coats the chicken.

  7. Step 7: Add the green part of the green onions and the cashews. Toss for 30 seconds.

  8. Step 8: Transfer to a serving dish. Serve with jasmine rice or other rice of your choice, garnished with extra sliced red chilli if desired.

Notes

Variations and storage

Use roasted unsalted cashews if needed; toast them for about 1 1/2 minutes, until lightly golden and nutty-smelling. Do not use salted cashews, as they can make the dish too salty.

Chicken breast can replace thigh; tenderize it Chinese-style for a softer, juicier result. Vegetarian oyster sauce can replace oyster sauce. The fish sauce can be replaced with more soy sauce, though the flavour will differ.

Serve with jasmine rice or another rice of your choice. Leftover stir fry keeps in the refrigerator for 4 days and can also be frozen.

About this recipe

This Thai-style stir fry pairs chicken and crunchy cashews with a bold, savoury sauce. It is a dry-style stir fry, so the ingredients are coated rather than swimming in sauce.

Have the ingredients chopped and the sauce mixed before you start cooking. Cook the jasmine rice beforehand, as it takes longer than the stir fry.
