Instructions
Step 1: Preheat the oven to 160°C/320°F.
Step 2: Mix the butter with the garlic and salt.
Step 3: Cut the bread in half horizontally.
Step 4: Drizzle the garlic butter all over the bread, covering every patch.
Step 5: Bake for 20 minutes, until the bread is crisp at the edges.
Step 6: Increase the oven temperature to 200°C/390°F. Top the bread with cheese and bake for 7–10 minutes, until the cheese is melted and bubbly.
Step 7: Sprinkle with parsley, if using, and cut the bread into pieces. Serve immediately as a side or for dunking in soup and stew.
Notes
Softer loaves such as ciabatta, Vienna bread or regular bread work well; sourdough also works. A flatter loaf gives a good bread-to-butter ratio.
For a variation, spread the bread with pesto or olive tapenade, add dried herbs, use truffle butter or oil, or sprinkle with Parmesan.
This bread is best served fresh. To reheat, wrap it in foil and warm it in the oven. To prepare ahead, drizzle the bread with butter, wrap it and refrigerate until ready to bake.

About this recipe
Split a loaf in half, drizzle it with melted garlic butter and bake until crisp at the edges. Add mozzarella and return it to the oven until melted and bubbly.

Melted butter is easy to drizzle over the cut bread, letting the buttery garlic flavor soak in.

Cut the loaf into pieces and serve as a side, or dunk it into soup or stew.
