Dressing

  1. Step 1: Mix the dressing ingredients and set aside for at least 10 minutes.

Noodles

  1. Step 2: Pour boiling water over the noodles and soak them according to the packet directions. Drain and set aside.

Meatballs

  1. Step 3: Mix all the meatball ingredients except the oil until combined.

  2. Step 4: Shape the mixture into 6 mini hamburger patties with your hands.

  3. Step 5: Heat the oil in a skillet over medium-high heat. Add the patties and cook for 2 1/2 minutes, or until golden. Flip and cook for 2 minutes, then remove from the skillet.

Assemble the bowls

  1. Step 6: Place the noodles in bowls. Add a handful of beansprouts, then tuck in the lettuce, carrot and radish.

  2. Step 7: Place the meatballs on top and finish with coriander and mint.

  3. Step 8: Spoon a generous amount of dressing over the bowls; it should be like a soup broth.

Notes

Chicken or turkey can replace the pork; fattier mince makes juicier patties. Lemongrass is optional.

Adjust the dressing to taste; you may not need all of it. For less heat, use a larger red chilli or leave the chilli out. Quick-pickled carrot and daikon are optional.

Other fresh vegetables can be used, such as shredded cabbage, cucumber, green beans, cherry tomatoes or leafy greens.

This home-style version serves the patties in noodle bowls rather than with pork belly in a broth. The fish sauce dressing is meant to be spooned generously over the noodles.
