Instructions

Prepare the vegetables and sausages

  1. Step 1: Preheat the oven to 200°C/390°F (standard) or 180°C/350°F (fan/convection).

  2. Step 2: Place the vegetables in a large bowl and toss well to coat.

  3. Step 3: Add the sausages and toss briefly.

  4. Step 4: Transfer everything to a roasting pan sized so the vegetables are stacked about two layers deep. Rearrange the sausages so they sit on top.

Make the gravy

  1. Step 5: In the same bowl used for the vegetables, add the butter and flour. Whisk.

  2. Step 6: Add a little broth and whisk, then whisk in the remaining broth. A few floating bits of butter are fine.

  3. Step 7: Pour the gravy mixture down the side of the pan, avoiding the sausages and vegetables.

  4. Step 8: If desired, spray the sausages with oil to help them brown, especially if they are lean.

Bake and serve

  1. Step 9: Bake for 25 minutes. Turn the sausages and, if desired, spray them with oil again. Bake for a further 25 minutes, or until the sausages are browned and the potatoes are soft.

  2. Step 10: Serve the sausages and vegetables with gravy spooned over the top. Garnish with fresh thyme leaves if desired.

Notes

Use sausages of your choice. Baby potatoes about the size of a golf ball can be halved; cut larger potatoes into smaller pieces.

The gravy’s thickness can vary with the amount of liquid released by the sausages and vegetables and with the oven and pan. If it is too thin, remove the sausages and vegetables and return the pan to the oven for a few minutes to reduce the gravy. If it is too thick, stir in hot water a little at a time.
