Instructions
Step 1: Preheat the oven to 220°C/425°F (200°C fan-forced).
Step 2: Cut the carrots diagonally into 4 cm / 1.75-inch lengths. Halve the thicker ends so the pieces are roughly the same width.

Step 3: Toss the carrots in a bowl with the sugar, butter, garlic, oil, salt and pepper. Pour onto a tray and spread out.
Step 4: Roast for 15 minutes. Toss the carrots, then roast for a further 10 minutes, until soft and caramelized at the edges with plenty of glaze left on the tray.

Step 5: Toss the carrots in the glaze on the tray, then transfer them to a serving bowl. Sprinkle with parsley, if using, and serve warm.
Notes
For a variation, add ½ teaspoon cinnamon or cayenne pepper. Substitute honey or maple syrup for the brown sugar, or reduce the sugar to 1 tablespoon.
To make ahead, take the carrots out of the oven when tender-crisp, around the 22-minute mark. Cool completely and refrigerate for up to 5 days. Reheat in the microwave, then toss the carrots in the glaze before serving.
Leftovers keep in the refrigerator for up to 5 days.
