Instructions
Preparation
Step 1: Mix the drizzle sauce ingredients in a bowl and set aside.

Step 2: Mix the stir-fry sauce ingredients in a separate bowl and set aside.
Step 3: Heat a large non-stick pan over medium-high heat. Add the cashews and toast for 2 minutes. Transfer them to a cutting board; once cool, roughly chop.

Step 4: Heat the oil in the same pan over high heat. Add the garlic and onion and cook for 1 minute. Add the beef and cook, breaking it up as you go, until you no longer see raw meat.

Step 5: Add the stir-fry sauce and cook, stirring, until it mostly reduces and caramelizes on the beef, about 3 to 4 minutes.

Tip: Let the sauce reduce around the beef to build its caramelized flavor.
Step 6: Serve the beef over rice with vegetables on the side. Spoon the drizzle sauce over everything, then top with cashews and coriander. Mix everything together to eat.

Notes
Use peanuts instead of cashews, or almonds as another alternative. Green onion can replace the coriander. Rice vinegar can replace the lime juice in the drizzle sauce, and cider vinegar can replace the rice vinegar in the stir-fry sauce.
Leftover beef keeps for 3 to 4 days in the refrigerator or 3 months in the freezer. Keep the drizzle sauce separate if possible. Cooked rice keeps for up to 3 days in the refrigerator.

About this recipe
Sweet chilli beef, fluffy rice and fresh vegetables make a flexible bowl for a quick dinner. Two sauces do double duty: one caramelizes around the beef, and the other adds a fresh, tangy finish.

Serve with jasmine or another plain rice, and choose raw or cooked vegetables to suit. Mix everything together as you eat.
