Instructions
Full recipe
Step 1: Preheat the oven to 180°C/350°F (160°C fan-forced). Line a large tray with foil, then baking paper.
Step 2: Put the nuts in a bowl.
Step 3: Put the butter in a small saucepan over medium heat. Once it is mostly melted, add all the remaining candy coating ingredients. Stir. When the mixture comes to a simmer, reduce the heat to medium-low and simmer gently for 2 minutes, stirring regularly so it does not catch.

Step 4: Pour the coating over the nuts and toss well with a rubber spatula for about 30 seconds. The mixture should be thick and coat the nuts well, with no runny caramel pooling at the bottom of the bowl.
Step 5: Spread the nuts on the prepared tray and bake for 20 minutes, tossing well halfway through, until deep golden. There should be hardly any candy coating liquid left on the tray.

Step 6: Let the nuts cool undisturbed on the tray for 10 minutes, then break them apart while still warm so they separate more easily. Leave them on the tray to cool completely; the candy coating will harden as they cool, which takes about 30 minutes.

Step 7: Serve in bowls for snacking, fill jars for gifting, add the nuts to platters, or chop and sprinkle them on salads. Add a sprinkle of sea salt if you like.

Notes
Notes
Use 4 cups total of unsalted nuts, choosing nuts of similar size. Smaller nuts, such as pistachios, may need less roasting time, so start checking them early.
White sugar gives a crisper, less sticky coating than brown sugar, honey, or maple syrup.
If needed, replace chipotle with extra smoked paprika and 1/4 teaspoon cayenne; omit the cayenne for a milder result. Garlic and onion powder can replace one another, and either cumin or coriander can be left out.
Store in an airtight container in a cool, dry place for up to 2 weeks. In hot, humid conditions the nuts may become sticky; warm them in the oven for 5 minutes at the same temperature, then let them cool completely.

About this recipe
These nuts pair a crisp candy coating with smoky spices, sweetness, and a little heat. Serve them in bowls for snacking or with drinks, or add them to a platter.

Use unsalted nuts of similar size so they roast evenly. Raw nuts are ideal, though roasted nuts can also be used.
