Chilli oil sauce for wontons

Equipment

  • Medium mixing bowl
  • Small frying pan
  • Large saucepan
  • Slotted spoon
  • Serving dish

Instructions

Chilli oil sauce for wontons

  1. Step 1: Put the garlic, sugar, chilli flakes, Sichuan pepper, five spice and stock powder in a medium mixing bowl.

A four-panel collage shows sauce seasonings, oils heating, hot oil being poured into the seasonings, and liquid being mixed into the sauce.
  2. Step 2: Heat the chilli oil and vegetable oil in a small frying pan over medium heat until hot. Pour over the garlic mixture. It will sizzle, but it will not spit.

Hot oil being poured into a bowl of chilli and spice mixture.
  3. Step 3: Whisk in the soy sauce, rice vinegar and hot water. The oil will remain a little separated on top. Set the sauce aside while you make the wontons.

A spoonful of red chilli sauce held above a bowl of prepared sauce.

Serving

  1. Step 4: Bring a large saucepan of water to the boil. Add the wontons and cook until they float: 4 minutes for freshly made wontons, or 6 to 8 minutes from frozen.

A two-panel collage shows wontons cooking in a strainer and sauce being poured over cooked wontons.

Tip: Do not thaw frozen wontons before cooking.

  2. Step 5: Transfer the wontons to a serving dish using a slotted spoon. Pour over the sauce, add an extra drizzle of chilli oil if you like, and sprinkle with green onion. Serve immediately.

A spoon drizzles red chilli sauce over wontons on a plate.

Notes

Wontons are best served freshly made, but leftovers keep in the fridge for up to 3 days. Reheat them in the microwave to help keep them juicy.

For a less spicy sauce, omit the chilli flakes and replace some or all of the chilli oil with toasted sesame oil. Chilli crisp can also be used in place of chilli oil; it adds crispy pieces and less oil.
