Equipment

  • Small bowl
  • Large frypan

Instructions

  1. Step 1: Mix the soy sauce, rice vinegar, sriracha and brown sugar in a small bowl. Set aside.

Dark red-brown sauce drizzling from a spoon into a bowl.
  2. Step 2: Heat the oil in a large frypan over high heat. Add the beef and cook, breaking it up as you go, until no raw meat is visible, about 2½ minutes. Add the garlic and chilli flakes and cook for 1 minute.

Ground beef cooking in a skillet, with steam rising.
  3. Step 3: Add the prepared sauce and stir to coat the beef. Cook for 5 to 7 minutes, stirring only every minute or so at first and then more often toward the end, until the sauce reduces and the beef starts to caramelise. Let it caramelise well for good flavour.

  4. Step 4: Add the water and cook for 1 minute to make the beef saucier.

A spoon lifting saucy caramelised ground beef from a pan.
  5. Step 5: Serve over rice, sprinkled with sesame seeds and green onion, with a squeeze of extra sriracha if you like. Add vegetables on the side.

Notes

For less heat, reduce or omit the chilli flakes first, then reduce the sriracha if needed. Light or all-purpose soy sauce works; avoid dark soy sauce, which has a more intense flavour. Apple cider vinegar can replace the rice vinegar.

For a different protein, use ground pork, chicken or turkey. Crumbled tofu also works; reduce the brown sugar by 1 tablespoon. Refrigerate leftover cooked beef for 3 to 4 days or freeze it for up to 3 months. Add a splash of water when reheating.
