Instructions
Step 1: Heat the vegetable oil in a large skillet over high heat. Add half the prawns and sear for about 45 seconds on each side, until golden. Transfer them to a bowl, then repeat with the remaining prawns.
Step 2: Remove the skillet from the heat to cool slightly, and reduce the heat to medium.
Step 3: Return the skillet to the stove and heat the sesame oil.
Step 4: Add the garlic, ginger and chilli flakes. Cook until the garlic turns golden.
Step 5: Add the water, Sriracha, soy sauce and sugar. Stir, increase the heat to medium-high, and simmer for 3 minutes or until the sauce starts to thicken to a thin syrup consistency.
Step 6: Return the prawns to the skillet and toss to coat them in the sauce. Cook for 1–2 minutes to reheat the prawns and reduce the sauce until it coats them.
Step 7: Garnish with sesame seeds, fresh chilli and shallots if desired. Serve with rice, or try cauliflower rice. Serve with a side salad if you like.
Notes
Tips and variations
If using frozen prawns, thaw them completely and pat them dry with paper towels to remove excess water.
Adjust the heat with the chilli flakes rather than reducing the Sriracha; the sauce relies on the Sriracha’s vinegar.
For a non-spicy version, omit the chilli flakes and Sriracha. Use 2 tablespoons ketchup, 1 tablespoon rice vinegar or cider vinegar, and 1 tablespoon Shaoxing wine or mirin; reduce the brown sugar by 1/2 tablespoon.
If using minced chilli or chilli paste instead of flakes, stir it in with the water rather than cooking it with the garlic.
