Instructions
Step 1: Bash the cucumbers until they split open on the sides, using something heavy such as the smooth side of a meat mallet, a rolling pin, a pestle, or a can.
Step 2: Cut the cucumbers into 2.5 cm (1-inch) chunks and place them in a bowl.
Step 3: Sprinkle with salt, toss, and leave for 20 minutes.
Step 4: Drain the excess liquid from the cucumbers.
Step 5: Shake or mix the dressing well.
Step 6: Drizzle the dressing over the cucumbers, sprinkle with coriander and green onions, toss, and serve immediately.
Notes
Coriander is optional. You can replace the green onions with finely sliced red onion, shallots, French onions, or chives.
Toasted sesame oil is brown and more flavorful than untoasted sesame oil, which is yellow.

About this recipe
Smashing cucumbers opens their sides so a sesame-ginger dressing can settle into the cracks. Coriander and green onions add a fresh finish.

Long English cucumbers or standard cucumbers both work here. Serve this refreshing salad with Asian-flavored dishes, especially spicy food.
