Instructions

Season and brown the pork

  1. Step 1: Rub the pork with about 1 teaspoon of oil. Mix the spice rub ingredients, sprinkle the mixture over the pork, and pat it on all over.

  2. Step 2: Heat 1 tablespoon of oil in a large skillet over medium heat. Add the pork and sear it all around until deeply golden brown, taking care not to burn the spices. Transfer the pork to the slow cooker.

  3. Step 3: Wipe out the skillet. Add the butter and melt it, then add the garlic and cook for 1 minute until golden. Add the remaining sauce ingredients, mix, and simmer rapidly for 30 seconds.

Slow cook and finish

  1. Step 4: Pour the sauce over the pork and cover the slow cooker.

  2. Step 5: For pork loin, cook on low for 4 to 5 hours.

  3. Step 6: For pork shoulder, cook on low for 10 hours.

  4. Step 7: Transfer the pork to a serving platter and cover it loosely with foil. Let it rest for 10 to 20 minutes.

  5. Step 8: Pour all the juices from the slow cooker into a large saucepan. Add the cornflour-and-water mixture and stir.

  6. Step 9: Simmer the sauce over medium-high heat for 5 minutes, or until it reduces to a syrupy consistency.

  7. Step 10: Slice the pork into thick slices, 1.5 to 2 cm (3/5 to 4/5 inch) thick. Serve with plenty of honey butter sauce.

Notes

Make ahead and leftovers

Brown the pork and make the sauce up to 1 day ahead. Pour them into the slow cooker insert, cover and refrigerate until ready to cook. If preparing more than about 12 hours ahead, keep the sauce separate from the pork.

Refrigerate leftovers for up to 3 days or freeze for up to 3 months. Pouring the sauce over the pork helps it soak through.

Use skinless pork trimmed of excess surface fat. Pork loin, pork shoulder or Boston butt, and scotch fillet or pork neck are listed as suitable cuts.
