Instructions

Prepare the pork

  1. Step 1: Whisk the marinade ingredients together in a bowl or zip-top bag. Add the pork and marinate for at least 1 hour; 3 hours is ideal.

  2. Step 2: Take the pork out of the refrigerator 20 minutes before cooking.

  3. Step 3: Shake off excess marinade without wiping the chops dry, then cook using one of the methods below. Serve with minted yogurt if desired.

Grill

  1. Step 4: Brush the grill grates or plate with oil and heat on high until smoking.

  2. Step 5: Place the pork on the grill and cook the first side for 4 minutes, until nicely charred. Turn and cook the other side for 3 minutes. Turn the chops on their sides to briefly sear the fat edge. Transfer to a plate, rest for 3–5 minutes, then serve.

Stovetop

  1. Step 6: Heat a skillet with about 1 tablespoon of oil over high heat. Add the pork and cook for 1 minute, then lower the heat slightly to medium-high. Cook for another 3 minutes, then turn and cook the other side for 3 minutes. Turn the chops on their sides to briefly sear the fat edge.

  2. Step 7: Transfer to a plate, rest for 3–5 minutes, then serve.

Oven

  1. Step 8: Preheat the oven to 200°C / 390°F for a fan-forced or convection oven, or 220°C / 430°F for a standard oven.

  2. Step 9: Position an oven shelf in the top third of the oven.

  3. Step 10: Place the pork on a tray. Bake for 15 minutes, then switch to the grill/broiler on high and grill for 5 minutes, until the surface is nicely browned.

  4. Step 11: Transfer to a plate, rest for 3–5 minutes, then serve.

Notes

For a different herb flavor, use 2 teaspoons dried thyme, or 1 teaspoon dried rosemary, tarragon, or sage in place of the oregano. Keep the same amount for mild dried herbs such as parsley, basil, or chives.

For optional minted yogurt, mix yogurt with finely chopped mint, minced garlic, a squeeze of lemon juice, salt, pepper, and a drizzle of olive oil. Let it stand for 20 minutes.

About this recipe

Lemon, garlic, and dried oregano flavor these juicy bone-in pork chops. Cook them on the grill, in a skillet, or in the oven.

Marinate the chops for at least 1 hour; 3 hours is ideal. The lemon juice can affect the pork’s texture if it marinates too long.
