Instructions

Method

  1. Step 1: Mix the marinade ingredients in a bowl. Add the beef and toss well to coat. Set aside to marinate for 1 hour, or up to 24 hours. For other cuts, use the marinating time noted above.

Thin beef pieces coated in a dark marinade in a bowl.
  2. Step 2: Mix the fried rice sauce ingredients in a small bowl. Set aside.

  3. Step 3: Whisk the eggs, sesame oil, salt and pepper together. Set aside.

  4. Step 4: Heat 2 tablespoons of oil in a large non-stick pan over high heat. Add the beef and cook for 2 minutes, until the surface is sealed. Add the garlic, white parts of the green onion and green beans. Cook for another 1 minute, stirring constantly, until the beef is caramelised and the ingredients are cooked without burning.

Beef pieces browning in a pan with a wooden spatula.
  5. Step 5: Add the rice and sauce. Toss for 1 1/2 to 2 minutes, until the sauce is dispersed and the rice is toasty.

Rice and sauce being added to beef and vegetables in a pan, then tossed together.
  6. Step 6: Push the rice to one side of the pan and shift the pan so the empty space is over the heat. Add the remaining 1/2 tablespoon of oil and spread it over the space. Pour in the egg, swirl the pan and let it partially set for 10 seconds. Use a spatula to gently scrape and swirl the egg into soft curds. When it is mostly cooked, quickly but gently toss it through the rice.

  7. Step 7: Add the green parts of the green onion and toss through. Divide between bowls and serve.

Notes

For thin sizzle steak, minute steak, schnitzel, pre-cut stir-fry strips or round steak, marinate for at least 4 hours. For slow-cooking cuts such as chuck, brisket, oyster blade or boneless short rib, marinate for 24 hours and slice thinly. Other steak cuts listed for this recipe can marinate for 1 hour.

Green beans can be replaced with vegetables that cook in a couple of minutes, such as carrots, zucchini or corn. Use regular diced onion in place of green onion if desired. Leftovers keep for 3 days in the refrigerator or 3 months in the freezer; cool fully before freezing.
