Instructions
Step 1: Melt most of the butter in a large non-stick skillet over high heat, saving a dab for scrambling the eggs.
Step 2: Add the garlic and cook for 10 seconds.
Step 3: Add the ham and stir for 30 seconds.
Step 4: Add the peas and stir for 30 seconds.
Step 5: Add the rice and tomato paste. Cook for 2 minutes.
Step 6: Add the fish sauce, soy sauce and sugar. Cook for 1 minute to caramelize the tomato-flavored rice.
Step 7: Push the rice to one side of the pan. In the cleared space, melt the reserved butter, then pour in the egg and scramble until just set.
Step 8: Toss the cooked egg through the rice and serve.

Notes
For the best texture, use cooked rice refrigerated overnight or frozen cooked rice that has been thawed. If using freshly cooked rice, spread it on a tray to cool quickly, then refrigerate until cooled. Plain white, brown or basmati rice can be used instead of jasmine rice.
Use chopped ham or bacon; thick-cut ham works well if chopping it yourself. For a variation, replace the fish sauce with more soy sauce. Choose light or all-purpose soy sauce, not dark soy sauce.

About this recipe
This quick fried rice is inspired by Vietnamese red rice, a tomato-flavored rice dish. Garlic, ham, peas and scrambled egg make it substantial enough to serve as a meal.

Tomato paste gives the rice its red color, while ham, peas and egg add savory flavor and texture. Serve it as a main or alongside other dishes.
