Instructions
Step 1: Mix all the ingredients in a bowl. Taste and add more salt if needed, depending on how salty the food you'll serve it with is.

Step 2: Serve at room temperature as a salsa or sauce over fish, other seafood, grilled or steamed vegetables, chicken, pork or pasta. You can also pile it onto bread or serve it as a dip with crostini or corn chips. To serve it warm, gently heat the sauce in a small pot until it reaches about blood temperature. Do not simmer or boil it, or it will lose its freshness.
Step 3: Use the sauce immediately or the next day. Store it in a very airtight container and let it come to room temperature before serving.
Notes
Substitutions
For the anchovies, use 1/2 teaspoon fish sauce plus a pinch of extra salt, then let the sauce stand for 20 minutes so the flavours meld. Alternatively, use 1/4 teaspoon Worcestershire sauce with extra salt.
If you don't have all three herbs, use parsley alone. Other suggested combinations are half parsley and half tarragon, or half parsley and half chives. Basil and chervil can also be used.
Use white or red wine vinegar instead of lemon juice.
