Instructions
Step 1: Cut the cucumbers in half lengthwise. Use a teaspoon to scrape out the watery seeds. Coarsely grate the cucumber with a box grater. Wrap it in a tea towel and squeeze out the excess liquid.

Step 2: Place the cucumber in a bowl. Add the remaining ingredients and mix to combine.

Step 3: Set aside for at least 20 minutes to let the flavors meld.
Step 4: Use immediately, or keep in an airtight container in the fridge for 3 days.

Notes
Greek or Greek-style yogurt works well; full-fat yogurt gives a thicker, richer result. Lebanese cucumbers are a good choice. If you use longer telegraph cucumbers, peel zebra stripes into the skin.
Fresh dill or mint is optional. Dill is preferred here, but mint also works; herbs are especially welcome when serving the tzatziki as a dip.
About this recipe
This creamy, tangy tzatziki is a fresh dip for vegetable sticks and warm pita, or a sauce for gyros, kebabs, wraps, and chicken. Squeeze the cucumber well so it doesn’t water down the yogurt, then give the mixture time for the flavors to meld.
