Equipment

  • Bowl
  • Skewers
  • Large nonstick pan
  • Paper towel
  • Foil
  • Barbecue grill or flat plate

Instructions

Prepare and marinate

  1. Step 1: Mix the marinade ingredients in a bowl until they form a paste. Add the chicken pieces and toss well so every piece is coated.

  2. Step 2: Marinate for 12 to 24 hours; even 3 hours helps. The chicken can also be cooked straight away.

  3. Step 3: Thread the chicken pieces onto skewers. Make 10 to 12 skewers, with 3 to 4 pieces on each. You can also thread the chicken onto the skewers before marinating, if that suits you better.

Cook and serve

  1. Step 4: Heat a large nonstick pan over medium-high heat with enough oil to lightly coat the base. Cook the skewers in batches for 3 minutes on each side, adjusting the heat as needed so the spices do not burn. Transfer each batch to a plate and loosely cover with foil to keep warm. Wipe any black bits from the pan with a paper towel, add more oil and continue cooking.

Tip: Let the cooked skewers rest for 3 to 5 minutes before serving.

  2. Step 5: For barbecue cooking, lightly oil the grill or flat plate. Heat to medium, or medium-high if the barbecue is not very strong. Cook the skewers for 3 to 4 minutes on each side, adjusting the heat as needed so the spices do not burn.

  3. Step 6: Serve with flatbreads or pita pockets, shredded lettuce, tomato and onion slices, and a sauce of your choice. Alternatively, serve with seasoned rice, a Greek salad and sauce.

Notes

Make ahead and leftovers

For make-ahead skewers, coat the chicken in the marinade, thread it onto skewers and freeze straight away. Thaw overnight in the fridge; the chicken will marinate as it thaws.

Cooked skewers keep in the fridge for 3 to 4 days.

If using 20 ml tablespoons, measure 3 teaspoons for each tablespoon called for.
