Ingredients
For 16 squares
Equipment
- Oven
- Microwave
- Microwave-safe bowl
- 20 cm / 8-inch metal pan
- Baking or parchment paper
Instructions
Step 1: Preheat the oven to 200°C/400°F (180°C fan). Grease a 20 cm / 8-inch metal pan with butter, then line it with baking or parchment paper, leaving an overhang so the bars can be lifted out once cooked.
Step 2: For the oatmeal cookie base, melt the butter in a microwave-safe bowl. Mix in the sugar until lump-free. Add the egg and mix until incorporated. Add the flour, oats, baking powder and salt, and mix until no flour is visible.
Step 3: Spread 1 1/2 cups of the mixture in the prepared pan and press it down with your hands. Spread the jam over the base, microwaving it briefly to loosen it if needed. Crumble the remaining mixture over the top with your hands.

Step 4: Bake for 30–35 minutes, or until the top is deep golden. Remove the pan from the oven and let the bars cool fully in the pan, about 2 hours, before lifting them out using the baking paper. To cool them faster, leave them on the counter for 30 minutes, then refrigerate for 30 minutes.
Step 5: Cut into 16 squares.
Notes
Store in an airtight container in the fridge for up to 5 days. Bring to room temperature before eating.
For an optional variation, add 1/2 cup chopped nuts to the oat mixture.
