Instructions
Step 1: Preheat the oven to 200°C (400°F), or 180°C with a fan.
Step 2: Use a metal roasting pan about 23 x 33 cm (9 x 13 inches). Fold a sheet of baking or parchment paper large enough to cover the pan in half, then cut four slits about 10 cm (4 inches) long to let steam escape. Alternatively, use foil and cut steam vents in it.
Step 3: Put the pan directly on the stove and heat the olive oil over medium-high heat. Add the shallots and garlic and sauté for 3 minutes, until soft. Add the cumin seeds and stir for 1 minute.
Step 4: Add the dried lentils, carrots, salt, pepper, and stock. Bring to a simmer.
Step 5: Gently place the sausages on top without pressing them into the lentils. Cover with the paper, pressing it gently so it sticks to the stock.
Step 6: Bake on the middle shelf for 25 minutes. Remove the paper and bake for 20 minutes more, until the sausages are browned.
Step 7: Remove the pan from the oven and let it rest for 5 minutes.
Step 8: Serve the sausages with the saucy lentils.
Notes
Puy lentils work best, but dried green or brown lentils also work and will be a little softer. Canned lentils are not suitable for this method.
Use one large brown onion in place of the shallots if needed. Leftovers keep for 3 days.

About this recipe
Sausages bake on top of lentils, carrots, and a cumin-scented broth in this one-pan dinner. As they cook, their juices flavor the lentils, which become saucy enough to serve alongside the sausages.
