Instructions

Full recipe

  1. Step 1: Preheat the oven to 180°C/350°F (160°C fan-forced). Spray a 20 cm/8-inch square tin with oil or grease it with butter. Line it with baking paper, leaving an overhang so you can lift the brownies out.

  2. Step 2: Put the butter and chocolate chips in a heatproof bowl. Microwave in 30-second bursts until melted, then stir until smooth.

  3. Step 3: Add the sugar and vanilla and mix. Add the eggs and mix well until smooth.

  4. Step 4: Add the flour, cocoa and salt and stir until smooth. If using the optional chopped chocolate, stir it in. Pour the batter into the prepared pan.

  5. Step 5: Bake for 24 minutes for a really gooey center, 28 minutes for fudgy, very moist brownies, or 32 minutes for a moist, fudge-cake-like texture.

  6. Step 6: Rest the brownies for 10 minutes before lifting them out of the pan; they are fragile while hot. Let them cool for at least 20 minutes before cutting. For especially neat slices, refrigerate for 30 minutes or overnight. Serve at room temperature for a fudgy texture.

Notes

Ingredient and storage notes

  • Use chocolate chips or block chocolate from the baking aisle, rather than confectionery chocolate. Avoid chocolate with a higher cocoa percentage, such as 70%, because it changes the texture.

  • The extra chocolate chunks are optional. For an alternative, use 1 1/2 cups roughly chopped walnuts.

  • Store in an airtight container for 4 days. Refrigerate only if it is very hot, or freeze for up to 3 months.

  • Cup and tablespoon measures vary slightly between countries. For this recipe, the listed cups or weights can be used; use weight measures rather than cups in Japan.
