Instructions

Bars

  1. Step 1: Preheat the oven to 350°F with a rack in the center. Line an 8-inch square pan with a parchment sling and lightly grease it.

  2. Step 2: In a medium bowl, whisk together the brown sugar, butter, and molasses until well combined. A dough whisk is helpful here.

  3. Step 3: Add the egg and vanilla and whisk until well combined.

  4. Step 4: Add the flour, oats, cinnamon, baking powder, and salt. Switch to a flexible spatula and mix until combined and no dry streaks remain.

  5. Step 5: Add the raisins and stir until evenly distributed.

  6. Step 6: Transfer the mixture to the prepared pan and spread it into an even layer. A small offset spatula is helpful here.

  7. Step 7: Bake for 25 to 30 minutes, until evenly browned and set in the center, or until a digital thermometer inserted into the center reads 205°F.

  8. Step 8: Remove the bars from the oven and let them cool slightly in the pan. Use the parchment to transfer them to a wire rack, then cool completely. The bars can be made up to 2 days ahead and stored airtight at room temperature.

Glaze and finish

  1. Step 9: In a medium bowl, whisk together the confectioners’ sugar and 2 teaspoons water to form a thick, shiny mixture. If needed, add more water in 1/2-teaspoon increments until the glaze has the consistency of honey and drizzles easily from the whisk.

  2. Step 10: Drizzle or pipe the glaze onto the bars. Let it set briefly, about 5 to 10 minutes, before slicing.

  3. Step 11: Store leftover bars airtight at room temperature for up to 3 days. Freeze for longer storage.

Notes

The bars can be made up to 2 days ahead and stored airtight at room temperature. Store leftovers airtight at room temperature for up to 3 days, or freeze for longer storage.
