Fresh and Bright Pizza Sauce

  1. Step 2: Combine the ingredients and mix well.

New York Pizza Sauce

  1. Step 3: Heat the oil in a heavy-based medium saucepan over medium heat. Add the onion and garlic and sauté until the onion is soft but not colored.

  2. Step 4: Add the tomatoes, oregano, salt, and sugar. Bring to a simmer, then reduce the heat to low. Cook, stirring occasionally, until reduced by half, about 1 hour. Stir more frequently toward the end to keep the sauce from catching.

  3. Step 5: Leave to cool before using.

Using Pizza Sauce

  1. Step 6: Use 1/4 cup of sauce for each 30 cm / 12-inch pizza.

  2. Step 7: Place the raw pizza crust on a pizza pan, preferably one with holes. Spread the sauce evenly with the back of a spoon, leaving a 1 cm / 1/2-inch border for the crust.

A spoon spreads red pizza sauce over an unbaked pizza crust.
  3. Step 8: Add toppings of your choice. For a standard pizza, sprinkle with 130 g / 4.5 oz freshly shredded mozzarella, then add 1 cup of toppings such as sliced pepperoni.

  4. Step 9: Bake on the top shelf of a preheated 275°C / 530°F oven for 10 minutes, rotating the pizza at 4 minutes, until the cheese has golden specks and the crust is crisp.

Notes

If your tomato paste already contains salt, use 1/2 teaspoon salt in the Instant Pizza Sauce. Passata is pureed, strained tomato.

All three sauces keep in the refrigerator for at least 5 days or in the freezer for 3 months. Leftover Fresh and Bright or New York-style sauce can also be used for pasta.
