Instructions
Prepare and use
Step 1: Whisk 1/4 cup (65 ml) of the water with the flour until smooth and lump-free.
Step 2: Mix in the remaining water, tomato paste and sugar.
Step 3: Use in place of canned tomatoes in a recipe, adding the mixture when the recipe calls for canned tomatoes. It will be watery before cooking; the flour thickens it as it cooks in dishes such as Bolognese, soup, curries and pasta bakes.
Step 4: If you want to see the mixture thicken before adding it to another recipe, cook it on the stove for 3 minutes over medium-high heat. This is not necessary when adding it directly to a recipe that will then be cooked.
Step 5: The mixture can be used in quick-cooking recipes or simmered for hours.
Step 6: Fridge storing - will keep for 5 days in the fridge.
Step 7: Freezing - simmer 3 minutes on medium high, stirring regularly, until it thickens. Cool, freeze.
Notes
Storage
Keep the mixture in the fridge for up to 5 days. To freeze it, simmer for 3 minutes over medium-high heat, stirring regularly, until thickened. Cool, then freeze.
About this recipe
Use this mixture in recipes that call for canned tomatoes—diced or crushed—or passata. The flour thickens it as it cooks, while sugar balances the sourness of tomato paste.

The mixture makes 400 g (14 oz), equivalent to one standard can of tomatoes.
