Equipment

  • Oven
  • Small bowl
  • Pizza pan or baking tray

Instructions

  1. Step 1: Preheat the oven to 250°C / 480°F, using fan or standard heat. Give it plenty of time to get thoroughly hot.

  2. Step 2: Mix the pizza sauce ingredients in a small bowl, then set aside.

  3. Step 3: Make and stretch out your chosen pizza base without a rolling pin. Stretch it onto a pizza pan or baking tray, following the directions for your chosen base.

Tip: For a pizza stone, see the pizza stone notes.

  4. Step 4: Spread the pizza sauce over the base, leaving a 1 cm / 1/2-inch border. Sprinkle on the cheese first, then drape the ham across the surface and add the olives, artichoke slices and mushrooms. If using the no-yeast base, spray or brush the exposed crust with olive oil.

  5. Step 5: Bake for 10–12 minutes, turning the pizza after 4 minutes, until the cheese has golden spots and the crust is crisp. Cut and serve.

Notes

Choosing a base and toppings

For store-bought dough, choose an uncooked or par-cooked base. Use artichokes from a jar; those marinated in oil are especially flavourful, and vinegar-marinated artichokes also work. Thinly shaved ham gives good coverage; chop regular slices into pieces if needed. Kalamata olives can be replaced with black olives.

Using a pizza stone

Preheat the stone for 30 minutes at 250°C / 475°F, or as high as your oven will go. Assemble the pizza on a pizza paddle or an inverted baking tray sprinkled with semolina or flour. Slide the pizza onto the hot stone in one quick motion, then bake for 8–10 minutes, until the cheese has golden spots.
