Instructions

  1. Step 1: Cut the corn kernels off the cob. If using frozen corn, do not thaw it.

  2. Step 2: Melt the butter in a large skillet over high heat. Add the garlic and stir for 10 seconds. Add the corn and cook for 5 minutes, stirring now and then, until the kernels are cooked and sweet with golden-brown spots. Avoid stirring constantly so the corn can brown.

  3. Step 3: Add the salt and pepper halfway through cooking the corn.

  4. Step 4: Transfer the corn to a large bowl. Add the mayonnaise, sour cream, lime juice, and Parmesan, then toss to combine; the heat will melt the dressing. Add the cilantro, red onion, green onion, and jalapeño. Toss again.

  5. Step 5: Transfer the salad to a serving bowl. Crumble the Cotija or feta over the top and add garnishes of your choice. Serve warm or at room temperature.

Notes

Fresh corn browns best, but frozen corn works too; cook it without thawing. Canned corn can also be used, though it browns less readily. Drain and dry it as well as possible first.

For variations, use parsley instead of cilantro, swap the red onion for a smaller amount of regular onion or shallots, or use canned jalapeño or another fresh chili. A little chipotle or chili powder can also be mixed in or sprinkled on top. Adjust the mayonnaise or sour cream to taste for more or less dressing.
