Instructions

Dressing

  1. Step 1: Shake the dressing ingredients together in a jar.

Potatoes

  1. Step 2: Halve the potatoes into pieces about 2.5 cm (1 inch) across; cut large ones into three pieces.

  2. Step 3: Bring 4 litres (4 quarts) of water to a boil and add the salt for the water. Add the potatoes and bring the water back to a boil, then reduce the heat to a simmer. Cook for 5 minutes or until just tender. Do not overcook or let the potatoes become too soft; they will keep cooking from the residual heat.

  3. Step 4: Drain the potatoes and transfer them immediately to a bowl.

Potato Salad

  1. Step 5: While the potatoes are hot, pour over half the dressing. Stir gently with a rubber spatula.

  2. Step 6: Set aside to marinate for at least 30 minutes, or even overnight.

  3. Step 7: Add the green onions and parsley and pour over the remaining dressing. Toss carefully with a rubber spatula, then serve. Serve warm or at room temperature; it is also good the next day.

Notes

This works with any type of potato. Starchy and all-purpose potatoes absorb the dressing better than waxy potatoes. Keep the pieces about the stated size so they hold together when tossed.

For variations, add fresh chives, basil, thyme or rosemary sparingly, or try dried herbs, bacon, Parmesan, rocket (arugula), sun-dried tomatoes, oregano or feta.
