Instructions
Step 1: Put the chickpeas, couscous, vegetable stock powder, coriander and garlic in a large bowl. Pour over the hot water and shake the bowl to level the couscous; the chickpeas should mostly settle on top. Cover with a plate or cling wrap and set aside for 5 minutes.
Step 2: Fluff the couscous with a fork. Let it cool a bit.
Step 3: Add the coriander, parsley, onion, sun-dried tomatoes with all their oil, rocket, lemon juice and black pepper. Sprinkle the lemon zest over the surface, then toss well to combine.

Step 4: Adjust the salt and pepper to taste.
Step 5: Transfer to a serving bowl, sprinkle with feta and serve.
Notes
For a larger-bead Israeli or pearl couscous, cook it according to the packet directions and skip soaking it in boiled water. Quinoa, barley or other grains can also be used; cook them as directed for those grains.
If using sun-dried tomatoes that are not packed in oil, drizzle the salad with about 1/3 cup (80 ml) olive oil, or a little more if needed.
The salad keeps for about 2 days, even after dressing. To make it ahead, combine everything except the sun-dried tomatoes and lemon juice; add those just before serving and toss.
Vegetable or chicken broth can replace the water and stock powder. Chicken stock powder or a crumbled chicken bouillon cube can replace the vegetable stock powder.
