Instructions
Step 1: Peel and cut the potatoes into 3 cm / 1.25-inch cubes.
Step 2: Place the potatoes in a pot, add 1 tablespoon salt, and add water until it is 5 cm / 2 inches above the potatoes.
Step 3: Bring the water to a boil, then boil for 15 minutes, until the potatoes are very soft and starting to fall apart.
Step 4: Drain the potatoes and leave them in a colander to steam-dry for 3 minutes.
Step 5: Meanwhile, melt the butter in a saucepan over medium-high heat. Add the cream and milk and heat until just before simmering; do not let the mixture boil. Remove it from the stove.
Step 6: Pass the potatoes through a potato ricer or use a masher with holes. Do not use a beater, which will make the potatoes dense.
Step 7: Add the hot milk mixture, 1/2 teaspoon salt and 1/4 teaspoon pepper. Gently stir until combined.
Step 8: Taste and add more salt and pepper if needed.
Step 9: Transfer the potatoes to a serving bowl. Pour gravy over them and serve immediately.
Step 10: For a KFC-style meal at home, serve with homemade fried chicken.
Notes
A potato masher with holes is the closest alternative to a potato ricer. Avoid using a beater, which can make the potatoes dense and heavy.

About this recipe
These soft, creamy mashed potatoes are made with real potatoes, butter, cream and milk, then served with gravy. Use a potato ricer for a soft, near-lump-free texture, or a masher with holes.
