Instructions

  1. Step 1: Crumble the chicken and beef stock cubes into the boiling water and stir to dissolve.

  2. Step 2: Melt the butter in a saucepan over medium heat.

  3. Step 3: Add the flour, onion powder, and pepper. Mix them into the butter with a wooden spoon or whisk.

  4. Step 4: While stirring, slowly pour in half the liquid. Once it is incorporated into the flour-and-butter roux, add the remaining liquid and mix.

Tip: The mixture thickens quickly when the hot liquid is added.

  5. Step 5: Stir for 1 1/2 to 2 minutes, until the gravy thickens. Taste and add more salt and pepper if needed.

Tip: The water is already hot, so the gravy thickens quickly.

  6. Step 6: Serve over chops, steak, sausages, vegetables, roast chicken, pork, beef, or lamb.

Notes

Variations and storage

  • Stock powder can replace the stock cubes. Some beef stock powders make a lighter-colored gravy. If using only chicken stock, add 1 teaspoon dark soy sauce for color and extra flavor, if desired.

  • For a gluten-free version, use gluten-free stock cubes instead of flour. Mix 2 1/2 tablespoons cornstarch with 3 tablespoons water, stir it into the hot stock liquid, then add that mixture to the saucepan with the melted butter. Cook until thickened, about 2 minutes.

  • The gravy thickens as it sits. Thin it with a little water if needed; if it is too thin, continue cooking until it thickens.

  • To reheat, whisk in water as needed and heat. Refrigerate covered gravy for up to 5 days, or freeze it. Thaw, reheat, mix well, and loosen with water as needed.
