Instructions
Step 1: Preheat the BBQ to medium-high.
Step 2: Melt the butter in a small saucepan over medium-high heat.
Step 3: Add the garlic and salt, then stir until the garlic is light golden and the salt has dissolved.
Step 4: Immediately remove the pan from the heat and set it aside for a few minutes to let the garlic infuse the butter.
Step 5: Split the bread in half lengthwise, or use thick individual slices.
Step 6: Spoon just over half the butter onto the cut face of the bread, avoiding the garlic bits. Brush a little butter onto the other side.
Step 7: Place the bread cut-side down on the BBQ and cook for 3–5 minutes, or until the edges are crusty, then flip.

Step 8: Brush away any burnt garlic bits, then baste the bread with the remaining garlic butter. The garlic bits mainly infuse the butter, but you can add them to the bread for texture.
Step 9: When the underside is crusty, about 3 minutes, remove the bread from the BBQ. Sprinkle with parsley, cut and serve.
Notes
Choose a loaf about 35 cm long and 4–5 cm thick. If you can only find a taller loaf, cut it into thick slices and grill individual pieces.
If using unsalted butter, add 3/4 teaspoon salt. Finely chop the garlic rather than crushing it or using jarred garlic.

About this recipe
Grill garlic bread on the BBQ for crisp, golden edges and a hint of smoky flavor. Melt the garlic into the butter first, then brush it onto the bread to help keep the butter from dripping onto the grill.
