Lemon garlic butter
Shrimp

Equipment
- Barbecue grill
- Skewers
- Small saucepan
- Bowl
- Paper towels
- Serving plate
Instructions
Prepare the grill
Step 1: Brush the barbecue grill with oil, then preheat it on high until very hot.
Step 2: If the shrimp are small enough to fall through the grill, thread them onto skewers.
Tip: Use two skewers so the shrimp do not spin while cooking.
Make the sauce
Step 3: Melt the butter in a small saucepan over medium-high heat.
Step 4: Add the garlic and salt. Stir until the garlic is light golden brown, then immediately take the pan off the heat; the residual heat will make the garlic golden and crisp.
Step 5: Stir in the lemon juice.
Season and cook the shrimp
Step 6: Pat the shrimp dry with paper towels.
Step 7: Just before cooking, put the shrimp in a bowl. Add the remaining shrimp ingredients and toss gently to coat.
Step 8: Working quickly, place the shrimp on the barbecue and cook each side for 2 minutes, until golden and crusty.
Step 9: Immediately transfer the shrimp to a serving plate.
Serve
Step 10: Drizzle all the lemon garlic butter over the shrimp, sprinkle with parsley, and serve immediately with fresh lemon.

Step 11: Serve with crusty bread for dipping into the butter on the plate.

Notes
Helpful notes
Finely chop the garlic rather than using a mincer or garlic crusher; smaller pieces can burn before the butter takes on the garlic flavor.
If using frozen shrimp, thaw completely and drain away excess water. Large or jumbo shrimp are less likely to fall through the grill.
For small shrimp, thread each one twice using two skewers per row so they do not spin. Soak bamboo skewers in water for 30 minutes first.
For the stovetop method, leave out the lemon juice in the shrimp seasoning. Heat 1–2 teaspoons of oil in a large heavy-based skillet over high heat and cook the shrimp in two batches. The lemon butter can be made in the same skillet afterward; lower the heat to medium-high first.
After coating the shrimp with seasoning, cook them within 10 minutes so they do not lose moisture.
