Instructions
Braising and marinating
Step 1: Put all the braising liquid ingredients in a large pot and bring to a boil over high heat. Add the octopus and bring the liquid back to a boil, then reduce the heat to low so it simmers very gently. Scoop off and discard any scum that accumulates on the surface.

Step 2: Braise for 1 hour until tender, checking first at the 45-minute mark. Check tenderness by taking a small nibble.
Step 3: Drain the octopus in a colander. Pick out and discard the bay leaves, onion and other aromatics, then transfer the octopus to a bowl.
Step 4: Mix the marinade ingredients in a bowl. Pour the marinade over the octopus while it is still hot and toss. Let it cool completely, cover, and marinate overnight in the refrigerator.

Step 5: For a BBQ, heat the hot plate over medium-high heat until hot, then spread the canola oil over it. Use tongs to transfer the octopus to the BBQ, leaving the residual marinade behind. Spread the octopus out and cook for 3 to 5 minutes, rotating as needed to brown it all over and make the legs golden and crisp. For stovetop cooking, use a large skillet and cook in 2 or 3 batches.

Step 6: Pile the octopus onto a plate. Sprinkle with parsley and chilli, and add lemon wedges. Serve with bread for mopping, or with crushed potatoes dressed with the leftover marinade.
Notes
Make-ahead and serving
The octopus keeps for 2 to 3 days in the refrigerator. It can also be prepared ahead and served cold on a seafood platter or grazing board.
For the pictured potato side, boil 500 g baby potatoes with the octopus during its final 30 minutes of braising. Lightly crush the potatoes, then dress with the leftover marinade after removing the octopus, with an extra squeeze of lemon and a little olive oil if needed. Finish with Parmesan and parsley.
Serve with Greek salad or crusty bread. Fresh octopus may take a little longer to become tender than frozen octopus.

About this recipe
Simmer baby octopus with aromatics until tender, let it soak up a lemon-garlic marinade, then sear until its legs are crisp. Serve with lemon wedges, bread for mopping, or a Greek salad.

Allow time for the overnight marinade before cooking. Frozen octopus should be thawed and drained before use.
