Instructions
Step 1: Mix the sauce ingredients in a small bowl, then set aside.

Step 2: Heat the sesame oil in a large wok or non-stick pan over medium-high heat. Add the egg and cook, stirring gently, until softly scrambled. Transfer to a plate.
Step 3: Heat the oil in the same pan over high heat. Add the onion and garlic and cook for 30 seconds. Add the beef and cook for 2 minutes, breaking it up as you go, or until no raw beef is visible. Add 2 tablespoons of the sauce and cook for 1 minute.

Step 4: Add the frozen vegetables and cook for 2 minutes, or until the beef is nicely caramelized. This step builds flavor, so let the beef caramelize rather than rushing it.
Step 5: Add the rice and remaining sauce. Toss for 2 minutes, until the sauce is evenly distributed and the rice grains begin to caramelize.
Step 6: Add the scrambled eggs and green onion, then toss briefly to combine. Divide among bowls and serve.
Notes
Storage and substitutions
Refrigerate leftovers for up to 2 days. Freeze them if desired, then reheat in the microwave with a sprinkle of water to moisten the rice.
Use light soy sauce alone or all-purpose soy sauce in place of the light and dark soy sauces; the rice will be lighter in color. Do not replace both with dark soy sauce.
Chinese cooking wine can be replaced with mirin, cooking sake or dry sherry. For a nonalcoholic option, use 1/4 cup low-sodium chicken broth or stock; allow an extra minute of stir-frying for evaporation, then toss in a knob of butter until melted.
Oyster sauce can be replaced with vegetarian oyster sauce or hoisin sauce.
Pork, chicken or turkey mince can be used instead of beef.

About this recipe
This beef fried rice pairs caramelized ground beef with day-old rice, vegetables and fluffy scrambled egg. A savory sauce brings the flavors together for a filling dinner.
Use day-old cooked rice so the grains stay crumbly rather than turning sticky. Frozen diced vegetables make prep easy, and fresh diced vegetables work too.
