Instructions
Crispy baked wings
Step 1: If preparing ahead, place the wings on a rack set over a rimmed baking tray and leave them uncovered in the refrigerator overnight. Otherwise, pat them dry with paper towels.
Step 2: Preheat the oven to 250°F (120°C). Set one oven shelf in the lower quarter and another in the top quarter.
Step 3: Line a tray with foil. Set a rack on the tray and spray the rack with oil.
Step 4: Put the wings in a large bowl. Sprinkle with the baking powder and salt, then toss well with your hands or shake in a zip-top bag to coat evenly.
Step 5: Arrange the wings skin side up on the rack; they can fit snugly because they shrink. Bake on the lower oven shelf for 30 minutes.
Step 6: Move the tray to the higher shelf and raise the oven temperature to 425°F (220°C). Bake for another 40 to 50 minutes, rotating the tray halfway through. Do not turn the wings over. They are ready when dark golden brown and the skin is very crispy.

Step 7: Transfer the wings to a large bowl, pour the sauce over them and toss to coat. Alternatively, serve the wings plain with Buffalo sauce for dipping.

Step 8: Serve immediately with blue cheese dip for the wings and celery sticks.
Buffalo sauce
Step 9: Whisk the sauce ingredients together until the sugar has melted. Keep the sauce warm or reheat it just before using.

Blue cheese dip
Step 10: Mash the blue cheese with the sour cream until smooth, or to your preferred texture.

Step 11: Add the remaining ingredients and mix until combined. Add milk to reach your preferred consistency. Store the dip in the refrigerator until needed, then take it out 15 minutes before serving.
Notes
Wingettes and drumettes are easier to coat and eat than whole wings. If starting with whole wings, allow 2.15 kg (4.3 lb) to yield 2 kg (4 lb) of wingettes and drumettes after discarding the tips.
Aluminium-free baking powder is suggested if available. Coat the wings evenly and avoid thick patches. Do not substitute baking soda for baking powder.
If Frank’s hot sauce is unavailable, another hot sauce can be used; the notes suggest adding 1 teaspoon of sugar if using sriracha.
For make-ahead preparation, the wings stay crisp while warm for about 20 to 30 minutes. After tossing with sauce, they stay crisp for about 10 to 15 minutes and begin to soften afterward. Reheating wings after they have been sauced makes them soggy.
To reheat unsauced wings, let them cool, cover and refrigerate. Spread them skin side up on a tray and bake at 200°C (390°F) for 5 to 8 minutes, until the skin puffs and becomes crisp again.

About this recipe
These chicken wings bake on a rack in two stages: first at a low temperature, then at a higher temperature. Toss them with buttery, spicy Buffalo sauce, or serve the sauce on the side.

Serve the wings with blue cheese dip and celery sticks. The dip can be smooth or left a little lumpy.
