Instructions
Prepare the chicken
Step 1: If cooking on a barbecue or over charcoal, soak the skewers in water for 2 hours.
Step 2: Mix the chicken and marinade with 1/4 cup of the coconut milk. Set aside for at least 20 minutes or overnight.

Step 3: Thread the chicken onto the skewers, using 4 to 5 pieces per skewer.
Step 4: Heat 1.5 tablespoons of oil in a large non-stick pan over medium-high heat.
Step 5: Cook the skewers in batches for 3 minutes on each side, until golden.

Make the Thai peanut sauce
Step 6: Place the remaining coconut milk and the peanut sauce ingredients in a saucepan over medium-low heat.
Step 7: Stir to combine, then simmer for 5 minutes, stirring occasionally.

Step 8: Adjust the consistency with water until the sauce is pourable but still fairly thick.
Step 9: Cover and keep the sauce warm while the skewers cook.
Serve
Step 10: Pour some sauce into a bowl and sprinkle with some of the peanuts. Stir some peanuts into the sauce if you like.
Step 11: Arrange the satay skewers on a platter and sprinkle with the remaining peanuts, coriander, and chilli.
Step 12: Serve with the sauce on the side for dipping. Add jasmine rice or Thai fried rice if you like.
Notes
Substitutions and storage
Chicken breast or tenderloin can replace the thighs; beef or pork can also be used with a well-marbled cut suited to quick cooking. Regular peanut butter works, but the sauce will be thicker and less peanut-forward; avoid adding too much water. Light or all-purpose soy sauce can replace dark soy sauce, though the sauce will be lighter in color. Plain white vinegar can replace cider vinegar.
The peanut sauce makes more than you may need. Refrigerate leftovers for up to 1 week or freeze them.

About this recipe
Marinated chicken skewers are served with a creamy Thai peanut sauce for dipping. Natural peanut butter gives the sauce a stronger peanut flavor, though regular peanut butter works too.

Serve the skewers with the sauce on the side, topped with chopped peanuts, cilantro, and sliced red chilli. Jasmine rice or Thai fried rice makes a fitting accompaniment.
