Equipment

  • Large saucepan or small pot
  • Large bowl
  • Fork
  • Jar

Instructions

Couscous

  1. Step 1: Heat the oil in a large saucepan or small pot over medium-high heat. Add the garlic and onion and sauté until the onion is translucent and starting to brown.

  2. Step 2: Add the couscous and stir, cooking for 1 minute. Add the broth and water and bring to a simmer. Cover the pot and reduce the heat to medium-low so the liquid simmers gently.

  3. Step 3: Cook for 10 minutes, until the liquid is absorbed and the couscous is cooked through but still firm. Use a fork to separate the couscous, then transfer it to a large bowl to cool. It will form a sticky block; it will separate when tossed with the dressing.

Salad

  1. Step 4: Place the dressing ingredients in a jar and shake well.

  2. Step 5: Add the salad ingredients to the bowl with the couscous, pour over the dressing and toss. Serve at room temperature.

Notes

Substitutions and storage

  • Use parsley in place of the coriander, or substitute ordinary yellow mustard for the Dijon mustard.

  • Baby spinach can be replaced with ordinary spinach, kale or silverbeet. Remove the tough stems from kale or silverbeet.

  • Keep the dressing separate if making the salad ahead, and toss it with the salad just before serving. The dressed salad keeps for up to 2 days, though it is best served fresh.
