Equipment

  • Oven
  • Baking tray
  • Aluminum foil
  • Wire rack
  • Shallow bowl

Instructions

  1. Step 1: Preheat the oven to 200°C/390°F (180°C fan-forced). Line a tray with foil and place a rack on top.

  2. Step 2: Mix the seasoning ingredients in a shallow bowl.

  3. Step 3: Toss the drumsticks in the olive oil. Stretch and pull the skin on each drumstick to cover as much of the flesh as possible.

  4. Step 4: Coat each drumstick in the seasoning, then shake off the excess. Place it on the rack and repeat with the remaining drumsticks.

  5. Step 5: Spray the drumsticks generously with oil.

  6. Step 6: Bake for 30 minutes, rotating the tray halfway through. Increase the oven to 220°C/430°F (200°C fan) and bake for a further 15 minutes, or until the skin is crispy. Serve hot.

Notes

Substitutions and baking tips

  • Chicken wings can be used with the same cooking time and oven temperature. For skin-on, bone-in thighs, bake for 35 minutes at 200°C/390°F (180°C fan), then 15 minutes at the higher temperature.

  • If you do not have a wire rack, line the tray with paper, turn the drumsticks halfway through baking and expect to add 5–10 minutes so the top can crisp.

  • Garlic powder can be replaced with more onion powder, onion powder with more garlic powder, and smoked paprika with ordinary or sweet paprika.

  • Use baking powder, not baking soda or bicarbonate of soda. The seasoned skin will not become as shatteringly crisp as plain chicken skin, but the baking powder helps it crisp.

About this recipe

These baked chicken drumsticks are coated in a smoky paprika, garlic and onion seasoning, with baking powder to help the skin crisp. Stretch the skin over the meat before coating so more of it is covered by the seasoning.
