Instructions
Step 1: Heat 1 tablespoon of the oil in a large skillet over high heat.
Step 2: Add the garlic and onion and cook for 30 seconds.
Step 3: Add the ham or bacon and cook for 1 minute to release its flavor.
Step 4: Add the frozen vegetables and cook for 2 minutes, until the carrot is almost cooked.
Step 5: Add the cauliflower rice and sauce. Cook, stirring regularly, for 4 minutes, until the sauce has reduced and the cauliflower is almost cooked but still firm and tender-crisp, not soft or mushy.
Step 6: Push the cauliflower rice to one side of the skillet. Add the remaining 1/2 tablespoon oil and let it heat briefly, then pour in the egg.
Step 7: Leave the egg for 10 seconds, then scramble it gently. When it is almost cooked, mix it through the cauliflower rice.
Step 8: Toss through the green onions and serve immediately.
Notes
Ingredient options and storage
Fresh cauliflower rice is preferred. If using frozen cauliflower rice, thaw and drain it well; squeeze out excess liquid if needed, while keeping 4 cups for the recipe.
Use dry sherry or cooking sake in place of mirin or Chinese cooking wine. For a nonalcoholic option, reduce the oyster sauce to 1/2 tablespoon and the soy sauce to 1/2 tablespoon, then add 3/4 teaspoon chicken stock powder to the sauce.
Hoisin sauce can replace the oyster sauce. If using dark soy sauce, reduce it to 1 tablespoon; it will make the cauliflower rice darker.
The dish is best freshly made. Leftovers keep reasonably well until the next day, but may become wetter after that.

About this recipe
This cauliflower fried rice pairs cauliflower rice with egg, mixed vegetables, ham or bacon, and a savory sauce. Serve it as a side dish or as a meal.

For the best texture, use cauliflower rice with grains about the size of cooked rice, not tiny couscous-like crumbs. Keep the pan hot and cook quickly so the cauliflower stays firm and tender-crisp.
