Instructions

Frittata

  1. Step 1: Preheat the oven to 180°C/350°F.

  2. Step 2: Whisk the eggs, milk, salt and pepper.

  3. Step 3: Heat the oil in a well-seasoned skillet or nonstick pan about 26 cm/11 inches wide over medium-high heat.

  4. Step 4: Add the bacon and cook until almost golden.

  5. Step 5: Add the garlic and cook for 30 seconds.

  6. Step 6: Add the spinach and toss until just wilted; the bacon should now be golden.

  7. Step 7: Turn the heat down to medium. Remove about one-third of the bacon and spinach to a bowl for the topping.

  8. Step 8: Add the butter to the pan and swirl or spread it across the base.

  9. Step 9: Pour in about two-thirds of the egg mixture. Scatter over half the cheese, then pour over the remaining egg mixture.

  10. Step 10: Scatter the reserved bacon and spinach over the top, then add the remaining cheese.

  11. Step 11: Cook for about 3 minutes, until the sides are just set but not golden. Check with a knife.

  12. Step 12: Transfer the skillet to the oven and cook for 8 minutes, until the center is just set and the cheese is melted on top.

  13. Step 13: Rest for a few minutes, then slice and serve.

Notes

For a richer texture, use cream instead of milk. A well-seasoned cast-iron skillet or a nonstick pan helps prevent sticking.

Refrigerate leftovers for up to 5 days and reheat them in the microwave.

For a stovetop version, cover the skillet and cook over medium-low heat for about 6 minutes, until the sides are well set. Slide the frittata onto a plate, place the skillet upside down over the plate, then flip the plate and skillet together to return it to the pan. Slide it onto a plate when cooked.
