Instructions

  1. Step 1: Heat a large non-stick frying pan over high heat. If the pan is not non-stick, add a little oil. Add all but 2 tablespoons of the diced bacon, reserving the rest for the topping. Cook until lightly browned, then remove the bacon and drain it on a paper towel.

  2. Step 2: Whisk the eggs, milk, salt and black pepper in a large bowl, or in a container if preparing the strata ahead.

  3. Step 3: Add the bread, 1 1/2 cups of the cheese and the cooked bacon to the egg mixture. Mix well. Cover and refrigerate for at least 30 minutes, until the bread has soaked up the egg, or leave it overnight.

  4. Step 4: Preheat the oven to 180°C/350°F.

  5. Step 5: Generously grease a 20 cm / 8-inch springform cake tin with butter. A cake pan without loose sides can also be used.

  6. Step 6: Pour the bread mixture into the cake tin and press it down. Scatter the reserved uncooked bacon and the remaining 1/2 cup of cheese over the top. Cover loosely with foil.

  7. Step 7: Bake for 25 minutes, then remove the foil and bake for a further 15–20 minutes, until golden on top. Check the centre with a skewer; it should come out without raw egg mixture.

  8. Step 8: Leave the strata to rest for 5 minutes before removing the springform sides or turning it out. Garnish with parsley, if using, then cut into slices to serve.

Notes

Make-ahead and storage

Cover and chill the assembled strata for at least 30 minutes or overnight before baking. Refrigerate leftovers for 4–5 days and reheat in the microwave, or freeze for up to 3 months in an airtight container.

Ingredient and pan options

Use plain white or wholemeal bread, such as a baguette, loaf, rolls or hamburger buns. Avoid very thick, chewy crusts. For the cheese, choose a good melting variety such as cheddar, Gouda, Monterey Jack or pepper jack. Ham can replace the bacon.

A 20 cm springform pan is specified. A standard cake pan or a 25 cm square baking dish can also be used; avoid a sandwich pan with a loose base. If your springform pan tends to leak, place a tray on the oven shelf below it.

About this recipe

This breakfast strata layers bread, eggs, bacon and cheese in a springform pan for a golden, custardy bake that slices like a cake. Assemble it ahead and chill it for at least 30 minutes or overnight before baking.

Plain bread works well, and slightly stale bread holds its shape after soaking. Serve in slices, with a fork or by hand.
