Instructions

Full recipe

  1. Step 1: Preheat the oven to 180°C/350°F (160°C fan-forced).

  2. Step 2: Crumple a sheet of baking paper in your hands and place it in a 30 x 20 x 3 cm (12 x 8 inch) lamington pan, or a similar-sized pan, with enough overhang to lift out the slice. There is no need to grease the pan; the mixture will weigh the paper in place.

  3. Step 3: Set aside a little cheese and bacon to sprinkle over the surface.

  4. Step 4: Heat the oil in a non-stick pan over medium-high heat. Add the remaining bacon and stir for 2 minutes, or until very light golden. Add the garlic and stir for 10 seconds. Remove the pan from the heat and set it aside to cool slightly.

  5. Step 5: In a large bowl, whisk the eggs, then whisk in the flour until smooth and lump-free. Add the zucchini, onion and all its grating juices, the oil and bacon from the pan, and the cheese. Switch to a wooden spoon and mix until combined.

  6. Step 6: Pour the mixture into the lined pan. Push it into the corners and smooth the surface. Sprinkle with the reserved cheese and raw bacon.

Unbaked zucchini mixture spread in a paper-lined pan and topped with bacon.
  7. Step 7: Bake for 35 minutes, rotating the pan at the 20-minute mark, or until the top is golden and a skewer inserted in the middle comes out clean.

  8. Step 8: Cool in the pan for 10 minutes, then lift the slice out using the overhanging paper. Cool for another 10 minutes before slicing. Serve warm or at room temperature.

Notes

If you don’t have self-raising flour, use 1 cup plain flour plus 2 teaspoons baking powder.

For a lower-carb variation, replace the self-raising flour with 1 1/4 cups almond meal and 1 teaspoon baking powder. It will rise less and have a slightly moister texture.

Store in the fridge for up to 4 days or freeze for up to 3 months.
