Instructions

  1. Step 1: Halve the avocado and remove the seed. Use a spoon to scoop the flesh into a food processor. Add the remaining dip ingredients. Start with just a pinch of salt, since canned chickpeas vary in saltiness. Blend until smooth, scraping down the sides as needed.

  2. Step 2: Adjust the flavor with lemon, salt and pepper, and adjust the dip consistency with water. Blend again.

  3. Step 3: Spoon the dip onto a plate and use the back of a spoon to make swirls on top. Drizzle with olive oil, sprinkle with pine nuts and garnish with coriander. Serve with chips, crackers or pita bread.

Notes

Variations and storage

  • For a milder hummus flavor, use yoghurt instead of tahini. Use fewer chickpeas or skip them and add a little more yoghurt for a stronger avocado flavor.

  • For a more hummus-like flavor, leave out the coriander and use tahini. Add jalapeño or cayenne for heat, or canned green chillies for a smoky note.

  • To help keep the dip green, put it in an airtight container, smooth the surface and cover it with a thin layer of water. It can stay green for up to 3 days.
