Equipment

  • 20 cm (8-inch) square pan
  • Heatproof bowl
  • Microwave

Instructions

  1. Step 1: Lightly grease a 20 cm (8-inch) square pan with butter. Line it with baking paper, leaving an overhang to make it easier to lift out later.

  2. Step 2: Set aside about 8 of the nicest glacé cherries. Finely chop 1 tablespoon of the pistachios.

  3. Step 3: Put the chocolate and oil in a heatproof bowl. Microwave in 30-second increments, stirring between each, until melted and smooth.

  4. Step 4: Stir the add-ins into the chocolate. Pour the mixture into the prepared pan and spread it out evenly. Bang and shake the pan to help the mixture settle.

Marshmallows and other add-ins stirred into melted white chocolate, then spread in a lined square pan.
  5. Step 5: Top with the reserved glacé cherries and sprinkle with the chopped pistachios.

  6. Step 6: Refrigerate for 3 hours or until firm. Lift the rocky road out of the pan using the paper overhang, then cut it into 5 lines and into chunks or larger pieces for gifting.

The rocky road is shown in the pan, then cut into long strips.

Notes

Variations and storage

Use milk or dark chocolate instead of white chocolate if you prefer. You can also swap the add-ins for dried fruit, other nuts, biscuits, raspberries or Turkish delight.

Keep the rocky road in a cool, dry place for at least a couple of weeks. Refrigerate it if the weather is very hot.

About this recipe
