Add-ins
Equipment
- 20 cm (8-inch) square pan
- Baking paper
- Mixing bowl
- Microwave
Instructions
Step 1: Line a 20 cm (8-inch) square pan with baking paper.
Step 2: Place the chocolate and oil in a bowl. Microwave in 30-second increments, stirring in between, until melted and smooth.
Step 3: Stir the add-ins into the chocolate. Pour the mixture into the prepared pan and spread it out evenly.

Step 4: Refrigerate for 3 hours or until fully cool.
Step 5: Remove from the refrigerator 30 minutes before cutting. Cut into 5 lines, then into chunks for eating or larger pieces for gifting.

Notes
The chocolate can be varied: use more dark chocolate or choose block chocolate instead of chips or melts. Other suggested add-ins include biscuits, other nuts, dried fruit or glacé cherries; use enough chocolate to coat them.
The rocky road keeps for weeks; refrigerate it if the weather is hot.

About this recipe
This rocky road combines dark and milk chocolate with marshmallows, chewy raspberry lollies, coconut and peanuts. Cut it into smaller chunks for eating or larger pieces for gifting.
Chocolate chips or melts are the easy option. For block chocolate, chop it finely before melting; chocolate from the baking aisle is made for melting and cooking.

Pack the marshmallows firmly into the measuring cups. The recipe uses pink and white marshmallows, raspberry lollies, unsweetened coconut and roughly chopped peanuts.
